Chi sono

Fin da bambino ho mosso i primi passi davanti ai fornelli, partendo da un semplice uovo fritto. Il mio viaggio è iniziato con la pasticceria e i lievitati, per poi espandersi alla cucina in generale, fino a farmi diventare a tutti gli effetti uno chef. La mia cucina abbraccia sia la tradizione, essenziale per comprendere le radici e le tecniche culinarie dei nostri nonni, sia l’innovazione, dove esploro nuovi piatti e abbinamenti attraverso cotture lunghe e studiate.

Per me, la pasticceria e l’arte bianca sono fondamentali. Il dessert rappresenta una delle portate principali, una sfida che richiede manualità e precisione per lasciare un ricordo memorabile nei commensali. Mi piace contribuire con qualità e impatto ai progetti e alle realtà con cui collaboro, portando sul campo le competenze e le esperienze che ho sviluppato nel tempo per gestire progetti con creatività e visione innovativa, soprattutto quelli che necessitano di grandi capacità di problem solving.

Sono affascinato dalle cucine asiatica e francese, alle quali spesso unisco sapori intensi presi da altre tradizioni culinarie internazionali. Cerco sempre ingredienti freschi e di qualità, prestando attenzione a ridurre l'impatto ambientale di ciò che uso.

We had our reception party in Alberobello and Antonio did the catering for us. The food was extraordinary!!! He took care of the flowers, food and drinks (and a bit of dancing). The gazpacho and tiramisu from his menu were just over expectation amazing. The communication was very easy and he is answering very fast to messages. Very organised and precise. I would definitely recomand Antonio for any event.

You MUST book Tony for an incredible experience dining, eating, and having fun. I hired Tony to teach us how to make homemade pasta, but also to create a typical Italian meal while we were in Tuscany.

He was pleasant, kind, funny, and paid special attention to my son who LOVED learning how to make pasta.

On top of that, Tony is an amazing chef. The food was outstanding, and every course was delicious with so much depth, flavor and deliciousness.

This was the highlight of our trip and he really takes the time to get to get to know you and can curate an incredible menu no matter what the occasion.

Chef Tony is incredible!!! We were fortunate to have Chef Tony cooking various meals for us over a two week period, and couldn’t get enough. We were immediately impressed by his responsiveness, gorgeous food photos online, Michelin experience, and enthusiastic ability to accommodate a ridiculously long list of major dietary restrictions. In person, his food was creative and absolutely gorgeous. I highly recommend the soft cooked truffle egg with pecorino foam! We had beautiful printed menus, wonderful courses, and the option to add a wine pairing. On top of all of this, he is just a truly wonderful person. He became a friend that we hope to go back and visit in the future. When we had a family emergency during our stay, he was so incredible in helping us through it, at one point even pausing dinner service to run to the pharmacy for us. Our experience with Chef Tony is one of the absolute highlights of our trip and I highly recommend you book as many courses as possible with him.

Antonio prepared a delicious meal for us! The Gaspacho was lovely and the special Italian meat too. We were in Italy for our 35th wedding anniversary. Antonio made a special Tiramisu cake for us with a personal inscription. The very fine Prosecco was also a very good addition. And he brought a bottle of champagne. Un'esperienza sorprendentemente piacevole. E’ stata la prima volte cha abbiamo usato questo tipo di servizio in quanto non potevamo muoverci liberamente con una bambina piccola. Eravamo un po’ scettici all’inizio, ma devo dire che Chef Antonio ci ha fatto ricredere fin da subito. Per ben tre volte ci ha preparato una cena deliziosa, facendoci sentire come se fossimo in un vero ristorante

We were in Italy for two weeks and Chef Antonio's meal was the best by far. It was of Michelin star quality. He was extremely professional and made a special birthday cake for my sister which was fantastic. Antonio not only provided a truly memorable culinary experience, but also provided outstanding service. You will not be disappointed.

Chef Antonio was absolutely incredible. We had a wedding with 15 guests at a villa, he made the meal as well as our wedding cake. He was very responsive to all of our questions ahead of time and even took into consideration dietary needs. The food was absolutely amazing, everyone agreed that it was the best food that they had their entire trip in Italy. The wedding cake he made was very special as well. He even had strawberries, flowers, and sugar for us to put on the cake as part of the ceremony as a surprise for us. Many of our guests said it was the best cake they ever had as well. My wife and I are extremely grateful that we could share in our day with Chef Antonio and I would recommend everyone to book him.
